The Perfect Recipe for Losing Weight and Eating Great

Pam Anderson, best-selling author of my favorite cookbook, Perfect Recipes for Having People Over, likes to eat. So over the years, she'd lose weight, only to put it all back on again. But here's the best part ... did I mention Pam loves to eat? You won't find a collection of flavorless, boring, inferior, "don't make me eat that" recipes in this cookbook.

Admittedly, I'm not a huge fan of dessert. I have no need for chocolate. But I was quite impressed with the "Dessert Too" and "Time for Tea" chapters. By far, my favorite chapter is "Dinners—Fast and Faster."

The first 33 pages of the book are filled with a well-thought out introduction, weight loss suggestions, and ideas for stocking your pantry. Here's the "recipe" table of contents:

  • Dinners—Fast and Faster
  • Dessert Too
Here's a recipe from the "Big Lunch in a Bowl" chapter. You can save time by picking up an already-roasted chicken from the supermarket. Also, did you know that it's not necessary to remove cilantro stems? Unlike other stems, they don't taste bitter. In fact, they taste just like cilantro and the crunch is an added surprise for your mouth.

Asian Chicken Noodle Soup
Makes about 2 quarts, Serving 4

1 1/2 quarts (6 cups) low-sodium chicken broth
4 large garlic cloves, minced
1 tablespoon minced fresh ginger, or 1 teaspoon ground
1/3 cup low-sodium soy sauce
2 cups shredded cooked chicken
2 packages (3 ounces) each ramen noodles, flavor packets discarded
2 cups fresh bean sprouts
4 scallions, white and green parts, sliced thin
1/4 cup chopped fresh cilantro leaves
1 lime, quartered

In a Dutch oven or soup kettle, bring broth, garlic, ginger, soy sauce, and chicken to boil. Add noodles; return to a boil and cook until tender, about 3 minutes. Add bean sprouts, scallions, and cilantro and ladle into soup bowls immediately. Serve with a lime wedge on the side.

282 calories per 2-cup serving.
